No reason why you can't, but how good an idea it is, mostly depends on the width of the tyre you run.
A 100mm wide tyre really needs to be on a 1.85" rim, or it tends to end up with a square profile and is horrible as you lean it into a corner.
A 120mm wide tyre really needs to be on a 2.15" rim, or it tends to look like a balloon. They often feel squirrelly/wallowy when you're hooking in.
A 110 works pretty well on either width rim, but I prefer them on a 2.15" rim.
