Race format

Ok, try to throw this around and see what we can dig up... 8)
Whats a good race format that you as a spectator/rider would like to be see/involved in ...
big or small, fast or slow out first for the day.  ???
Capacity ????
All stars????
A grade ????
Sidecars
run the 125's first ...250.....2504st   ????
over 65's
any ideas/likes/hate etc

My two bobs worth-Old bikes first, maybe before lunch and before the track cuts up.
                          -If not enough old guys-run them together as more like a demonstration         so spectators get to see how it used to be-so to speak.
                          -Then the rest of the racing by class/size or age
                          - oh and the sidecars come after the water truck.
