.......Which side comes off and how much do I have to remove to do it ?

Basically the same as all suzuki
drain the oil and remove the clutch cover on the right hand side.(you will need to get in there on reassembling)
now go to the left side and start removing the flywheel and all of those screws.
How far do you need to strip it down?
maybe check out one of the microfische websites like cmsnl or bikebandit

I need to split the cases, so do I need to remove all of those little plates with the countersunk screws ?

i think the plate your referring to is on the drive side of the crank? that allows access to the seal and bearing. Shouldnt need to get in there unless your replacing either of those two or the crank.
the screws that hold it together are on the flywheel side

It's easier to pull from mag side, as you use the stator / sprocket fixings as your pull points.
Roger.. all those backing plates are there to hold bearings in place - pay particular attention to lengths of those screws.
NB don't forget to remove screws that hold shift drum .... put a zip tie around the pawls to stop spring and plunger going west on you prior to removal ;D
In general they are a very simple compared to a Rm M / S motor.
